Introduction

A slightly sweet and refreshing spinach salad. A slightly sweet and refreshing spinach salad.
Number of Servings: 4

Ingredients

    1 bunch of fresh spinach
    1 1/2 cups of mandarin oranges
    1/4 cup of chopped pecans
    1/2 cup of chopped onion

Directions

1.) Thoroughly wash and rough chop the spinach and place in salad bowl.
2.) Combine mandarin oranges, pecans and onions with spinach with the spinach. Be sure to drain orange wedges of exces juice or syrup before mixing.
3.) For added zing, crumble a tablespoon of gorgonzola cheese or 2 tablesppons of balsamic vinagrette or italian dressing per serving.

    Incredible!
    Fast, simple, tasty and a little out of the ordinary. Great for when you're after a refreshing side salad. Many minor variations possible - I used oranges rather than mandarins and slivered almonds rather than the chopped pecans because it was what I had on hand. Will try the original next time. - 7/12/10
