    Egg, fresh, .5 large
    Flour, white, 1/4 cup
    Baking Powder, 1/4 tsp
    Splenda, 1/4 cup
    Milk, nonfat, 1/8 cup
    Margarine, soft, 2 tsp


Whisk egg & splenda together. Add flour and baking powder. Mix until just blended. Heat milk with margarine until margarine is melted. Add to mixture; mix just until blended. Put into a greased mini loaf pan (or two cupcakes). Bake for about 12 minutes.

Serve with "Better for you Icing" and Strawberries
