    1/2 cup brown rice, uncooked
    1 cup water
    firm tofu 200 g (or around 1/2 lb)
    1 medium carrot, grated
    50ml (1/5 cup) of soy sauce, or less to taste
    2 tsp sesame oil
    1 Tbsp sesame seeds (optional--if omitting, delete 52 calories, 4.5g of fat, and 88mg of calcium from totals )
    1 Tbsp vegetable oil (only if you don't have a non-stick pan--not included in nutritional info calculator)


Drain the tofu and blot with a paper towel. Wrap in paper towels or dish towels (or both) and place under a heavy plate for around 30 minutes. Then break it up into small bits (a wet sort of crumble).

Combine rice and water in rice cooker and cook for around 35 minutes. (or use stovetop cooking method).

If you have a good non-stick pan, heat the tofu by itself until it dries out a bit and gets at least a little brown. (if not, heat the vegetable oil first and add the tofu to it).

Then add carrots, sesame seeds, and soy sauce. You might find 50ml of soy sauce is too salty. You can add less and then adjust to taste when you are ready to eat.

Heat until carrots start to soften. Add sesame oil and mix in thoroughly.

Combine rice and tofu/carrot mixture in a large bowl and stir well. Enjoy hot!
