    4 Flour or Corn Tortillas
    1 Sliced Red Pepper
    1 cup Shredded Light Cheddar Cheese
    2 Eggs
    8 Egg Whites
    1/2 cup Skim Milk
    1 cup 1% Cottage Cheese
    0.5 tsp Cumin
    1 tsp Chili Powder
    Salt and Pepper to taste


Place Tortillas around bottom of pie plate to make crust. Places slices of red pepper on tortillas and top with shredded cheddar cheese. Beat eggs, skim milk and egg whites together. Stir in cottage cheese, cumin, chili powder, salt and pepper. Pour mixture into pie plate over peppers and cheese. Bake for 45 minutes at 350F, then broil for 2-3 minutes until egg is puffed and set. Cut into wedges and serve. Makes 8 - 2
