    1 tbsp olive oil
    1 chicken thigh, skin and bone removed cut into 1in peices
    1 cup peas and carrots, canned
    .5 cup long grain rice
    1 tbsp ground ginger
    1 tsp garlic powder
    2 tsp soy sauce
    2 large eggs, scrambled


warm oil of med heat
add chicken and cook until white.
add the rest of the ingredients and cook until warm.
