Introduction

Great go-to meal for those nights when you can't figure out what you WANT! Great go-to meal for those nights when you can't figure out what you WANT!
Number of Servings: 4

Ingredients

    1 lb boneless, skinless chicken breasts
    1 (16oz.) bottle chunky salsa (I like mild Pace)
    3/4 C. Cheddar cheese
    1 (8oz) can corn

Directions

1. In a large baking dish, pour a small amount of salsa on the bottom of the dish and sprinkle some corn.
2 . Trim off any excess fat off chicken breasts and place on top of the salsa/corn mixture in the dish.
3. Pour the remaining salsa and corn over the chicken and cover with foil.
4. Bake at 350 for 45 minutes
5. When done, sprinkle the cheese over the chicken and place the oven on Broil and cook, uncovered, until the cheese is melted and slightly browned.

    This was wonderful!! I doubled the recipe because I have a large family, and I added the black beans that were suggested. I also used frozen chicken tenders instead of chicken breast. It required an extra bit of baking time, but ooohhh, was it worth the wait! It was awesome! - 7/27/09

    This is a favorite in our house, and it's simple too! This recipe really saves on sodium and fat by not having taco seasoning or cream of chicken soup. YUMMMY!!! - 5/12/09

    Yummm! Thanks! I needed something quick and easy. I added a 1/2 can of black beans and 1/2 can of corn instead of just one can of corn - both were leftovers from a previous meal, so its what I had on hand. Thanks for sharing! - 10/3/10

    This one was GREAT! I love that this is topped with cheese. I have cut way back on the amount of cheese in my diet so this was like a visit from an old friend! Ha! - 10/3/09

    Made this tonight. Very tasty! I used frozen corn, a 15 oz can of black beans & fresh salsa. Also made my own "chips" from whole wheat tortillas that I cut, sprayed with Pam & sprinkled with garlic salt. (I should not have left them in the oven on broil, tho!) - 3/10/09

    Excellent and super easy. I added sliced poblano, yellow, and orange peppers, and mushrooms. Put it in low carb tortillas with lettuce. Great dinner! Would give it 5 stars but it won't let me select any, - 2/24/14

    I make this often my family loves it. I cook chicken on stovetop with cooking spray, when chicken is almost done, then I add salsa and black beans and corn. Also great with low fat mexi blend cheese.

  • Looks yummy, but please note that your calculations are incorrect--the protein count is way too low. 1/4 lb boneless skinless chicken breast comes to a bit over 26g of protein, actually. Much better than 10g! - 9/11/12

  • Cheap, Easy and relatively quick what more could you ask for... besides taste which this dish HAS! Had to bake longer b/c there was a lot of chicken. Really tasty hubby loved it and I am taking leftovers for lunch! Might try adding more veggies next time b/c there WILL be a next time! - 1/10/12

  • was very good; liked the combination of cheese, corn and salsa; I also added black beans; I felt it could use some SW marinate on the chicken to make it less dry!
