    10 oz (1 box) frozen spinach
    1/2 cup chopped onion
    1 box Jiffy corn muffin mix
    2 eggs
    1/2 cup parmesan cheese (grated)
    1/2 cup cheddar cheese (grated)
    1/3 cup bleu cheese dressing
    2 T butter (melted)
    1/8t garlic powder


Heat oven to 350

drain spinach
Combine spinach and onion

In a large bowl, combine:
eggs, parmesan cheese, cheddar cheese, butter (melted), and garlic powder

Stir in spinach and onion mixture until coated. Stir in Jiffy corn muffin mix, until coated.

Cover and chill for 1 hour

Shape mixture into small balls. Place on greased cookie sheet. Bake at 350 for 10-12 minutes.

Makes 36, 3" spinach puffs. Can be frozen. Serving size is 1 puff.
