    4 c ff broth
    1 can low-fat coconut milk
    2 c cooked diced sweet potato
    1 c cauliflower cooked
    1/3 c sweet pepper sliced and cooked
    12 oz raw shrimp shelled and cooked
    1Tb minced ginger
    1 Tb minced garlic
    1 shallot minced
    1 ts thai red curry paste
    3 Tb lime juice
    1 ts toasted sesame oil
    fish sauce and salt to taste


Saute on med. ginger, garlic and shallots in some coconut oil from the top of the coconut milk a few minutes. Add curry, cook 1 min. add a little broth if needed. Add the rest of broth and bring to a boil. Add veggies and shrimp.Turn down heat to med. add coconut milk and simmer till warm. Add rest to taste. Top w/chopped cilantro.
