    2 Tbsp best-quality olive oil
    2 Tbsp flour; whole wheat or gluten free...
    .75 cup cooked, mashed sweet potato or regular potato
    .75 cup low-fat milk
    1 cup yogurt cheese
    2 Tbsp grated parmesan cheese- look for very old variety
    sea salt
    freshly gound black pepper
    .75 pound whole grain noodles: use spiral, elbo or other.


Makes 9 cups- 9 servings?
1. Cook macaroni noodles according to instructions on package. Drain and set aside.
2. Meanwhile, heat olive oil over medium heat in a medium skillet. Add flour. Using a wire whisk, make a paste (called a roux). Don't let the roux burn. Add the warm milk gradually, whisking all the while, until you see the sauce begin to thicken. Add the mashed sweet potato or regular potato. Keep stirring.
3. Now add the grated parmesan cheese, yogurt cheese, sea salt, and pepper. Your sauce should look smooth. When that mixture is nicely heated through, add the drained, cooked noodles. Stir to coat the noodles. Serve piping hot.

*You can also finish the cooking in the oven. Set your oven to 225. Coat a casserol dish lightly with olive oil and fill with macaroni mixture. Cover and bake for 10 to 15 minutes.

** Steam broccoli and snow peas and toss them into the dish along with cooked sliced chicken breast.. or along side...
