My aunt Gwen was a great cook and she kept go-to, quick recipes that were always as good as her spent-all-day-making recipes. This was one of my favorites from her go-to, quick list. Ingredients

    1 lb 93% lean ground beef
    1 cup chopped onions
    1 10.75 oz can Campbell's Healthy Request Cream of Mushroom Soup
    1/4 cup water mixed with soup
    1/4 tsp salt(optional)
    1/4 tsp black pepper
    3-4 medium potatoes, thinly sliced with skin on

Directions

Brown ground beef and onions, drain.
Spray the bottom of a 2 qt glass baking dish(11x9 inch). Cover the bottom of the dish with a layer of potatoes and a layer of ground beef. Pour half of soup mixture over this. Add another layer of potatoes and ground beef, pour remaining soup mixture over this also. Bake covered for 1 hour at 350°F.
MAKES 6-8 SERVINGS

    This is really great. I made two changes. First, I added just an bit more water to the soup. Then on the last layer, I mixed the meat and onion with the mushroom soup before pouring over the potatoes. Made assembly easier. My family thought it was delicious. - 7/19/09

    I really liked this dish. I did add a few extras to kick it up a notch though. Some mushrooms, red peppers and a little extra seasoning. Next time I think I will use turkey sausage links sliced thin instead of ground beef. Great recipe though!! - 12/7/09

    I had to modify a bit for time - I cubed my potatoes and nuked them, added to the beef and soup mix and stirred together - finished cooking on stovetop. Did whole thing in cast iron skillet. Foil over it at the end. Edges got crispy.
    still want to try the layers way - too little time after work

    Me & my boyrfriend (who isn't tryin to eat healthy) both loved it. Some of the potatoes were a little undercooked..will prob slice the slices in half next time. For seasonings I added pepper, italian seasoning, parsley, onion powder (because I didn't add real onions), & garlic. I added corn too. YUM - 5/26/10

    My husband loved this, and he is fairly picky! I only had to use 2 whole potatoes, so I also added about 1/2 cup of fat-reduced shredded cheddar cheese in the last 5-10 minutes of baking. It was terrific! - 5/18/10

    Was a little bland at first but after reading the comments I added a bit more spice to it. My husband suggested chili powder for a "kick" and that turned out great. We will be making this again and trying different seasonings. - 4/30/10

    I've made this for years and I use turkey burger in place of ground beef. I also add green beans between layers and fat free or low fat monteray jack cheese on top. My family loves this! I read someones comment about adding corn and I am going to try it that way next time I make it. - 1/18/11

    I increased the water to about 1/2 cup, added some extra spices that I like, and a clove of garlic. I also experimented with the recipe by using egglplant in half of the mixture instead of potatoes. Using eggplant instead of or in addition to potatoes is a very good variation! Super easy, thanks! - 9/4/11

    Delicious,easy recipe. I added some thinly sliced carrots to the ground beef mixture and subsituted cream of chicken soup.I ended up making three layers because my potatoes were large so I had to add more water to the soup and i cooked it for an extra 30 mins. End result was a hit! Thanks! - 5/26/11

    I made this tonight and it was wonderful and easy! I did add salt and pepper, plus a little red pepper and garlic. I also did not have any onions so I added chopped dry onion to the ground beef. I used two cans of mushroom soup also. It was wonderful and my 6 year old gobbled it up. - 1/13/10

    I used milk in the soup instead of water, added red pepper chili flakes to the soup, topped with frozen peas and monterey jack cheese. I must say, "Delish"! Thx! - 3/8/11

    It was pretty good - I added about 4 cloves of garlic to the onion and meat. And also substituted half the ground beef for an equal amount of breakfast sausage. Yum. Threw in some mushrooms and frozen corn, used cream of chicken soup, and added paprika to the soup. My hubby and I both enjoyed it! - 12/2/10

    I have hamburger on my menu this week so I will definitely use this idea, but like the others I will add other veggies to make it a one dish meal. If it is too hot inside I will use the bbq on one side and cook some chicken on the other for later in the week! - 8/1/10

  • this was good, but I added more spice, we like it spicy ...also added mushroom and less meat....next time I'm going to add carrots, this is easy and quick and can be made in many different way..using tomato soup is good too..or cream of celery is good too..   • I added diced green pepper and minced garlic to the onions. I also added some curry powder to the soup mixture before pouring over. I did a small layer of potatoes on top and then backed half way through and added some shredded cheese. The potatoes on top crisped up really nicely. - 1/12/17

  • I have been making this recipe since the late 60's when my MIL gave me a Campbell's cook book (Easy Ways To Delicious Meals) all using Campbell soups, Family loved everything I made from it.   • It was ok. I used 2 cups mirapoix, added some rosemary and white pepper. Should have added fresh garlic. Definitely needed more than one can of soup. I used the mandolin for the potatoes on thin, but I think superthin would have been better. - 12/5/16

  • Very good if you doctor it up. I added salt free Southwest seasoning on each layer as well as salt free garlic and herbs. It had a bit of a kick, but we like spice. Fed 4 adults. I also used ground turkey. We try to limit our beef intake. - 9/27/16

  • Made this last night. Very good. Didn't have any problems with my potatoes being uncooked but although I sliced 2 medium sized russets, I didn't use all of the slices. Used food processor to slice thin. Just eyeballed and stopped adding when looked like there was plenty there. Will make again. - 11/11/15

  • Very yummy! This is a good base recipe. I added a 1/2 can of cheddar soup and thinned with milk instead of water. Also added more spices (oregano, thyme, chili powder), garlic, and chopped tricolor peppers to the meat mixture while cooking. I topped off with a layer of potatoes and put the last of m - 6/29/15

  • Was very good. Made exactly as recipe called for. I think my ground beef was not chopped small enough. And my casserole dish was a bit large. When I made it again I will try to get the ingredients to meld together better by making the beef chopped up more. - 12/7/14

  • After 45 min I checked on potatoes and they weren't browned at all.I uncovered the last 15 but still not brown, so I added an addtional 10 min to baking time. I finally turned up to 400 and added another 15 min, which made potatoes brown, but the meat dry - 2/26/14

  • I also added Italian Seasoning and Rosemary over the layers. I used Gluten Free Cream of Mushroom, so it was a little thinner that I would have liked. I think next time I will use a smaller pan (square) instead of the 11x9 (rectangle). It may set up a little better and be easier to serve. But yum! - 10/19/13

  • I recommend microwaving the potatoes for 5-7 minutes after slicing. It will make sure they are cooked through. We are going to use 2 cans soup, and 2 lbs of meat next time. We also used 96/4 hamburger meat. Sprinkled pepper and grated, low fat chz on top. Husband added a little cumin to his. - 7/9/13

  • one question....how do you calculate the serving? I mean is it 1 cup or do you weight it?? I'm tracking my calories intake and I'm having a hard time figuring out how much of it I can have...
