Introduction

When you want a healthy, spicy, lighter chili. When you want a healthy, spicy, lighter chili.
Number of Servings: 10

Ingredients

    1-2 tbsp olive oil
    1-2 chopped onions
    3 stalks celery, chopped
    2 cloves garlic, minced
    28 oz can diced tomatoes
    1/2 c bulgur
    1 c V8 juice
    15 oz can kidney beans
    4 c vegetable broth
    1 tsp cumin
    1 tbsp chili powder
    1 tsp pepper
    1 tbsp tamari
    dash hot sauce


Directions

Soak bulgur in V8 for one hour. Saute onion, celery, carrot, and pepper (optional) about 5 minutes. Add garlic and cook one more minute. Add tomatoes, veggie broth, spices, and bulgur and cook about 40 minutes. Add beans and cook 10 more minutes. Ad pepper and hot sauce to taste.
