    6 Green onions (scallions)
    1 lb green beans, trimmed
    1 lb extra lean ground beef
    1 tbsp canola oil
    3 cloves minced garlic
    2 tsp grated gingerroot
    1 red or green chili, minced
    1/3 cup sodium reduced chicken broth
    1 tbsp sodium reduced soy sauce
    2 tsp Splenda
    2 tsp cornstarch
    7 oz Japanese Undon Noodles


Cut scallions into white and green parts. Mince white parts. Cut the green parts into 1 inch sections and set aside

Steam beans 3 minutes - you will want them still crisp but almost cooked. Set aside.

In wok or large skillet, heat oil over medium-high heat. stir fry garlic and ginger along with white parts of scallions and minced chili pepper for 1 minutes. Add ground beef for 5-7 minutes until fragrant and no liquid remains. Add black bean sauce. Stir fry for 1 minutes.

Whisk broth wtih 1/2 cup water, soysauce, Splenda and cornstarch. Add to wok. Add beans and green parts of scallions - cook, stirring until thickened, and beans are heated through. Toss in Japanese noodles.
