    1 cup rolled oats
    1 cup 2% milk
    1 oz lemon juice
    1 cup all purpose flour
    1 tsp baking power
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1 tsp nutmeg
    3/4 cup brown sugar (lightly packed)
    1/4 cup butter (melted)
    1/5 cup raisins
    1 tsp white sugar
    1 tsp cinnamon


Combine milk and lemon juice to sour milk. Combine milk and oats and let stand for one hour. Combine flour, baking powder, baking soda, salt, brown sugar, 1 tsp cinnamon, 1 tsp nutmeg in bowl and stir. Add egg and melted butter to oat mixture. Add to dry ingredients and stir just e\until all ingredients are moistened. Fold in raisins. Spray 12 muffin cups with cooking spray and fill each 3/4 full. Mix 1 tsp white sugar & 1 tsp cinnamon and sprinkle over muffins. Bake at 400 for 15 - 20 minutes.
