Ingredients

    1 prepared 10" pie crust
    3 cups of cooked and drained or 2 15 oz cans of white beans
    2/3 cup almond milk or anyt non dairy milk or water
    1/2 cup flour of your choice
    1/4 cup nutritional flakes
    1 tsp salt
    1/4 tsp grated nutmeg
    scant 1/4 tsp tumeric
    1/8 tsp pepper
    1 TNSp olive oil
    1 1/2 cups finely chopped onions

Directions

Preheat oven to 400. Pre bake pie crust 10-12 mis. let cool. Reduce oven temp to 350. Place beans, vegan milk, flour, nut yeast flakes, salt nutmeg, tumeric and pepper in food processor or blender. Blend several minutes until mixture is smooth. Stop machine often to stir and scrape down sides. Set aside.

Heat oil in med skillet over med high heat. When hot add onion and saute' until tender and golden, about 8 min. stir into blended mixture and pour into pie crust. bake on center rack of oven until top is firm, browned and slightly puffed. 45 mins to 1 hour. Let rest 15 minutes before slicing.

If you want a broccoli quiche steam 2 cups bite size broccoli florets then stir them into blended mixture just before pouring into pie crust. I like to slice tomatoes thinly and layer as well. bake as directed.

If you want to do a spinach quiche cook one 10 ounce package of frozen chopped spinach according to package directions. Draiin well in a mesh strainer squeezing out all the water. Express as much liquid as possible. stir into blended mixyure just before pouring into pie crust.

Mushroom quiche add 2 cups sliced mushrooms to the onions once they are soft and continue sauteeing until mushrooms are tender and almost all the liquid has evaporated. stir into blended mixture before pouring into pie crust. bake as directed.

* I bake mine well done. I test with a knife to make sure it if firm all the way through.

I sometimes serve mine with salad and soup. Sometimes with brunch foods.

If you have extra mixture that doesn't fit in pie crust you can oil a cassarole pan and put into the casserole without a crust, and bake as directed!
