Introduction

Pumpkin bread with a creamy twist. Pumpkin bread with a creamy twist.
Number of Servings: 16

Ingredients

    1 (8oz) Package Fat Free Cream Cheese
    1 Cup Canned Pumpkin
    1 Cup + 2 TBSP Sugar
    1/2 Cup Brown Sugar
    4 Egg Whites
    2 Cups Flour
    1/2 Cup Skim Milk/Soymilk
    1/4 Cup Canola Oil
    2 1/2 tsp Baking Powder
    3 tsp Pumpkin Pie Spice
    1/4 tsp Salt

Directions

1) Preheat oven to 350 degrees & grease a 9x5 inch loaf pan.
2) Mix 1 cup of the sugar and 3 of the egg whites with ALL ingredients EXCEPT the last egg white, the extra 2 TBSP of sugar, and the cream cheese (set these ingredients aside).
3) Beat cream cheese, 2 TBSP of sugar, and last egg white until well blended.
4) Pour/spoon HALF of the batter into the loaf pan, and then pour cream cheese mixture on top.
5) Evenly cover with remaining pumpkin batter.
6) Bake for about 1 hour or a little more. (Until toothpick put in center comes out clean...).
