    2 cup Buttermilk
    4 Chicken Thighs
    2 Chicken Breasts
    1 Onion
    3 Cloves Garlic,
    Hot sauce, cayenne pepper, salt and pepper to taste
    1 cup coarse Bread Crumbs
    Salt and Pepper, more cayenne or paprika to taste
    1 T Olive Oil


Bash the garlic and roughly chop onion, place in large bowl with buttermilk, chicken and spices. Let chicken marinade in fridge for 12 to 48 hours.

Pre heat oven to 425. Mix bread crumbs with salt and pepper and extra spices such as paprika or cayenne, if desired. Take chicken pieces out of marinade and dredge in crumb mixture. Toss marinade out. Drizzle chicken lightly with olive oil. Place on baking sheet or roasting rack and let sit for five to ten minutes. Place in oven and bake until juices run clear (about 35 minutes).

Excellent served with a big mess of greens or broccoli salad!

**note: the calories for this recipe were calculated for 1 cup of buttermilk, since so much of the marinade is thrown away. The calories were also calculated for the chicken to have skin off, since I prefer it that way, If you take the skin off, you can calculate significantly less calories per serving!
