I had to use up the chicken sausage in the house, and I was craving chili. Great for a weekend afternoon when you have errands to run or things to get done! Dry beans make it the cheapest dinner around! I had to use up the chicken sausage in the house, and I was craving chili. Number of Servings: 14

Ingredients

    1 lb bag pinto beans (dry)
    4 Spicy Italian Gourmet Chicken Sausage (from Trader Joes)
    Hunts tomato sauce, 12 oz can
    Safeway Canned Diced Tomatoes, 12 oz can
    3 tbsp Lawry's Taco Seasoning,
    1 tbsp Cumin
    4 cloves garlic
    1 green bell pepper chopped
    2 medium yellow onions

Directions

Sort and rise pinto beans then cook on low heat about 2 hours. When beans are cooked drain most of the extra water. Add all other ingredients chopped into whatever size pieces you like and let simmer at least one hour for flavors to meld, uncover and simmer until thick and hearty.
Serve with topped with cheese or sour cream if desired. Freeze in individual servings to have on hand any time!
Makes 14 one cup servings.
