    1 lb. boneless skinless chicken thighs
    1 tbsp. chopped fresh thyme
    1/2 tsp. salt
    3/4 tsp. coarsely ground black pepper
    1/4 cup + 1 tbsp. all purpose flour
    1 tbsp. olive oil
    1/4 cup minced shallots
    1 cup fat-free low-sodium chicken broth
    1 tbsp. fresh lemon juice


Makes 4 servings (4 oz. chicken and 3 tbsp. gravy)

Place chicken between 2 sheets of plastic and pound to 1/4 inch thickness.

Sprinkle chicken with thyme, salt, and 1/2 tsp. pepper. Put 1/4 cup flour in shallow dish; dredge chicken in flour.

Heat oil in large skillet over medium-high heat. Add chicken; cook 2-3 minutes each side, or until done. Remove chicken from pan; keep warm. Add shallots; cook 1 minute.

Stir in chicken broth and remaining tbsp. flour, scraping pan to loosen browned bits. Simmer 3-4 minutes, until gravy is slightly thick, stirring constantly. Add lemon juice and remaining pepper. Spoon gravy over chicken.
