Ingredients

    1 Pound of Lean Ground Turkey
    1 large Yellow Onion
    2 cups of Baby Spinach
    Reduced Fat Feta Cheese (1oz)
    1/3 cup of Greek Yogurt
    1 cup of Sun Dried Tomatoes
    1 Sweet Red Pepper
    2 Large Eggs
    1 Cup of McCann's Irish Oatmeal
    2 cloves of chopped Garlic

Directions

Spray a bread pan or casserole dish with olive oil flavored cooking spray. Preheat oven to 400. Chop garlic, Red Pepper, onion, spinach and Sun dried tomatoes. In a large bowl add chopped ingredients. Add 2 eggs. Add ground turkey, feta cheese, Greek yogurt, and oatmeal. Mix all ingredients together until well combined. (add salt and pepper to taste if desired) Pour mixture into bread pan or casserole dish. Cover with foil. Cook for 30 minutes and then remove foil and continue cooking for an additional 30 minutes.
