Introduction

This is the chicken dish that I made for my family on our first healthy Valentine's day together. Thus the name "Chicken Te Amo" It is super simple and very tasty! This is the chicken dish that I made for my family on our first healthy Valentine's day together. Thus the name "Chicken Te Amo" It is super simple and very tasty!
Number of Servings: 4

Ingredients

    2 cups cooked brown rice
    16 oz chicken breast
    1/2 cup finely diced onion
    1 tomato - chopped
    1 small jar of Pace picante
    1 cup of finely shredded cheese

Directions

Cook the rice according to the package directions.
Spray a 8 by 11.5 in baking dish with non-fat cooking spray.
Layer the bottom of the baking dish with the rice.
Place the chicken on top of the rice.
Top the chicken with onions and tomatoes.
Pour the picante sauce over all of it.
Cover the dish and bake at 400 degrees for 20 minutes.
Remove cover and bake for 20 minutes more.
Sprinkle with the cheese and bake for 5 more minutes or until chicken is no longer pink in the middle.
ENJOY!
