Number of Servings: 6

Ingredients

    1/2 c. organic canned pumpkin (NOT pumpkin pie mix)
    3/4 c. Pamela's gluten-free baking mix
    1 large egg
    1/2 c. unsweetened apple sauce
    3 tsp. brown sugar
    6 tbl. Bob's Red Mill Ground Flax Meal
    1/2 tsp. vanilla extract
    1 tsp. ground cinnamon
    1 tbl. gluten-free granola (topping, optional)

Directions

Pre-heat oven to 350 F. In a large bowl, combine pumpkin, applesauce, and egg until blended. Add in flour, flaxseed meal, vanilla, brown sugar, and cinnamon. Mix well. Divide into 6-muffin tin, add optional granola topping to each muffin, and bake for 20-24 minutes. Makes 6 muffins.

    Opps I think I made a mistake. I was so looking forward to these. I used Bobs Redmill GF flour. No leavening. Not good at all. I think I will try my own since I would have to change too much to be yours in the end. - 3/9/09

    Yeah, the Pamela's mix has leavening in it. Sorry it didn't work out!
