Introduction

Ingredients

    2 large beets, deskinned and diced
    1 large butternut squash, diced
    1 large onion, diced
    4 cloves garlic, smashed
    Homemade chicken or beef stock
    salt and pepper to taste

Directions

In a large skillet or high braising pan, add ground beef with a pinch of salt and pepper. When beef is just browned, add enough stock to cover about a half inch of the suface space. Turn up heat to high and add beets, squash, garlic, onion, and salt and pepper. Let cook down until beets are tender.

Serve over brown rice, quinoa, or amaranth. Top with fresh spinach, swiss chard, or fresh herbs.
