Fun little treats when you're not in the mood for an entire slice of cheesecake. Fun little treats when you're not in the mood for an entire slice of cheesecake.
Number of Servings: 10


    1.5 oz. cream cheese
    2 tsp. sugar-free raspberry flavored jello
    1 1/2 tbsp. hot water
    1tsp erythritol
    1 1/2 tsp. unsweetened cocoa


Dissolve jelly crystals in hotwater and beat into cream cheese with erythritol and unsweetened cocoa. Refrigerate mixture until firm.

Slightly dampen hands and pinch off a marble sized piece of the cheese mixture and roll into a ball. Do this with the rest of the cheese. Freeze for 30 minutes in a single layer on wax paper.

Mix some extra cocoa and sweetener. Place in a gallon sized zipper bag and add frozen
cream cheese balls. Shake gently to coat. Store in refrigerator in a single layer to prevent sticking.

Whole mixture is just over 1 gram of effective carb inc. coating - and if you share the balls with someone else (but why would you?!), you may get away with only 1/2 carb for dessert! Beware - they're more-ish, but very rich!
