Ingredients

2 Boneless Skinless Chicken Breasts
1 Can 98% fat free Cream of Mushroom Soup
1 Cup Daisy Light Sour Cream
1 Onion (chopped)
4 cups sliced mushrooms (preferably Baby Portabella)
1/2 half package of pasta (wide noodles)
1/2 cup beef stock
sherry
Thyme (either fresh or dried)
Salt
Pepper
Garlic Powder
Paprika
Directions
Slice chicken breast into 1 inch wide slices. Saute in a pan coated with cooking spray. Season with Thyme, Salt, Pepper, and Paprika. Once no longer pink, remove from pan.
Spray pan with cooking spray. Saute onions until clear, add mushrooms, 1/2 cup beef stock, a splash of sherry and cook until mushrooms are tender. Add chicken back to pan with Mushroom soup. Cook for 15 minutes. While cooking mixture, cook pasta according to package instructions.
When pasta is done, drain and set aside. Add sour cream to chicken and mushrooms. Cook until heated through.
Serve Chicken mixture over noodles.
