    2 medium onions, chopped
    2 celery ribs, sliced thin
    1 medium carrot, chopped
    2 tsp olive oil
    5 1/4 C water
    1 C dried lentils, rinsed
    1/4 C minced fresh parsley
    1 Tbsp reduced sodium beef bouillon
    1/2 tsp pepper
    6 oz tomato paste
    2 Tbsp white vinegar
    2 tsp brown sugar
    1/2 tsp salt
    2 Tbsp parmesan cheese, shredded


In a large saucepan coated with cooking spray, saute the onion, celery, and carrot in oil until almost tender. Add the water, lentils,parsley, bouillon, and pepper. Bring to a boil. Reduce heat;cover and simmer for 20-25 minutes or until lentils are tender, stirring occasionally.

Stir in tomato paste, vinegar, brown sugar and salt;heat through. Sprinkle each serving with cheese.
