Introduction

Found in Healthy Cooking March 2009 and modified for my tastes. Found in Healthy Cooking March 2009 and modified for my tastes.
Number of Servings: 6

Ingredients

    1/2 package turkey kielbasa, halved and sliced
    1 large onion, chopped
    2 shallots, chopped
    3 garlic cloves, minced
    1 Tbsp. olive oil
    2 cups water
    1 can reduced-sodium chicken broth
    2 cans white beans
    1/2 cup uncooked long grain white rice
    1/2 cup uncooked long grain brown rice
    1 tsp. dried oregano
    1 tsp. dried thyme
    1/2 tsp. pepper
    2 cups spinach chopped
    1 cup mustard greens chopped

Directions

In large dutch oven/soup pan, saute the kielbasa, onion, shallots, and garlic in oil until onion is tender. Add water, broth, beans, rice and seasonings. Bring to a boil. Reduce the heat, cover, and allow to simmer for 15-20 minutes until rice is cooked. Stir in spinach and greens, cooking until spinach is wilted; about 5 minutes.

1 serving is approximately 1 2/3 cups.
