    2 Tbsp Oil
    1 large onion, finely chopped
    2 garlic cloves, crushed
    1 tsp mild chili powder
    2 red bell peppers, finely chopped
    8 oz carrots finely chopped
    8 oz potatoes finely chopped
    3 celery sticks, sliced
    3 3/4 to 4 cups vegetable broth
    6 tbsp crunchy peanut butter
    2/3 cup corn
    salt and pepper
    Chopped peanuts as garnish
    (not included in nutritional info)


Heat the oil in a large pan and cook the onion and garlic for 3 minutes. Add the chilli powder and cook for 1 minute. Add the bell peppers, carrots, potatoes and celery. Stir and cook for 4 minutes. Add the broth, then peanut butter and corn. Stir well and season. Bring to a boil, cover and simmer for 20 minutes, or until the vegetables are done. Garnish with chopped peanuts.

Makes 6 servings.
