    1 c. whole wheat pastry flour
    3/4 c. Canola oil or olive oil
    2/3 c. garlic, minced
    12c. water
    12 c. tomatoes, diced (canned)
    1 medium onion, diced
    2 c. celery, diced
    4 c. green peppers, diced
    4 tsp. oregano
    4 tsp. basil
    2 tsp. thyme
    1 Tbsp. paprika
    1/4 tsp. cayenne
    2 tsp. black pepper
    2 1/2 tsp. salt
    2/3 c. red wine
    7 c. okra, sliced in 1/2


Make a roux with flour, oil and garlic in a 3 qt. saucepan. Cook the roux over moderately low heat, stirring constantly until roux is a very dark brown (almost burnt).

Whisk in 5 c. water. Pour roux into 5qt. pot. Add remaining 7c. water followed by the cans of tomatoes.

Add all the remaining ingredients except okra, spinach, greens, gumbo file, 1 c. water. Simmer for 15 minutes.

Mix gumbo file and 1 c. water together and set aside. Add okra and greens to pot and continue to simmer for 30 minutes.

Then add the gumb file/water mixture. Simmer for another 15 minutes.

Serve gumbo ladled over brown rice in large soup plates.
