    7 eggs

    1/4 cup cream

    2 T protein powder (not flavoured)

    1/2 cup chopped red peppers (capsicum)

    1/2 cup chopped feta cheese

    1/5 diced ham

    A sprinkling of thyme on top of each frittata.


You will be making approx 35 mini muffin-sized frittata, so if you don't have enough trays, you will need to bake in two lots. Grease trays well before use.

Mix eggs, cream and protein powder in a pouring jug. Make sure protein powder is dissolved well - check for lumps.

Combine feta, ham and peppers in a bowl, then spoon 1/2 tablespoons into the muffin tray holes. Don't over-fill, and don't press into the pans.

Pour a little egg mixture into each muffin hole. Repeat so that the egg mixture is shared evenly between each pan. The pans should not be filled to the top with egg mixture.

Top with thyme.

Place in preheated oven (around 125 deg Celsius, 250 degrees F) and check every 5-10 minutes until frittata are puffed up and golden brown on top. They should resist being touched on top - if they feel fragile and sink to the touch, they are not done.

Remove from oven and allow to cool in pan. Serve immediately or refrigerate in a covered container until your picnic!

Makes 7 serves of 5 muffins each (or 35 muffins).
