    Fresh Baby Spinach, 4 cups
    Fresh Mushrooms, chopped, 2 cups
    Muir Glen Fire Roasted Tomatoes, 2 cans
    Parmesan Cheese, 1 cup
    Garlic to taste
    Salt and Pepper
    3.5 oz tilapia steaks, 4


Skillet fry mushrooms in fat free cooking spray until tender, add spinach and garlic. Cook until spinach is tender, but still brightly colored.

Salt and pepper tilapia steaks to taste. Roll the spinach mixture inside the tilapia steaks and place seam side down into baking pan. Cover with tomatoes and parmesan cheese.

Bake 20-25 minutes until fish is flaky.

Serve hot.

    ok. Had to add spices to it .Also sauteed garlic/onion with the spinach to add a little more flavor. Used a low fat cheese instead. - 6/20/10

  • I wish there was a cooking temp for these on here. Other than that it was good. I used stewd tomatoes instead because that was all that I had. I also seasoned more than what was mentioned. Still good. If I do this again I will cook longer or look for a cooking temp. - 4/14/17

  • We tried this recipe in a crockpot. I put the fire roasted tomatoes on bottom, then mushrooms, then spinach. I layered the fish on top of the other ingredients, then covered with fresh Parmesan cheese. The crockpot was on high for three hours. Very good! Could use some more seasoning. - 2/23/12

  • An idea to keep the fish wrapped is to use spaghetti stick parts as a tooth pick to hold the fish together. I did it and it worked like a charm. I was able to pull it out afterwards and no fires. =) I am going to spice the fish more next time but it was great. - 6/26/07

  • Overall pretty good. It was too difficult to roll so i layered it as previously suggested. The fireroasted tomatoes were good although the kids scaped them off. I only used 1 can though. - 6/17/07

  • The tilapia filets we had were small, so we layered the ingredients - wonderful mix of flavors and textures. Next time I'll add a little more pepper. I also only used 1 15oz can of tomatoes. It was easy to prepare and looked like something prepared by a chef! - 3/24/07
