Introduction

Ingredients

    Beef Fajitas- John Soules Foods, 32 oz
    Water chestnuts, sliced, 1 can, drained
    Bamboo shoots, sliced, 1 can, drained
    Snow Peas, fresh, 2 cup
    Uncle Ben's Instant Whole Grain Brown Rice, 4 cups, cooked
    Kikkoman Lite Soy Sauce, .5 cup
    Water, .5 cup
    Garlic, 1 tsp
    Ginger, ground, .5 tsp
    Balsamic Vinegar, .25 cup
    Brown Sugar Twin, 4 tsp [more to taste]

Directions

Cook rice and set aside. Put water, soy sauce, vinegar, ginger, garlic and sweetener in bowl and microwave 1 minute. Stir and set aside. Cook beef strips [precooked, so you're just heating] in large nonstick skillet over med high heat. Sprinkle meat with lite soy sauce, and a touch of garlic and ginger if desired. Stir together and add veggies, cooking til hot and desired level of crunch [I like mine fairly crunchy, but you can cover it for a couple minutes if you like them more soft]. Spoon beef and veggies over rice and spoon sauce over beef and veggies. Yum. And good the next day, too.
