    1/2 c. Egg Beaters
    1/2 c. Honey
    1/4 c. Skippy RF Peanut Butter
    1 tsp. Vanilla extract
    1 c. carrots, grated
    1/2 c. dried apricots, chopped
    1 c. Flour, all-purpose
    1 c. Quaker Old-Fashioned Oats (dry)
    1 tsp. Nutmeg
    1 tsp. Cinnamon
    1-1/2 c. Total cereal


Preheat oven to 350 degrees.

Combine Egg Beaters, honey, peanut butter and vanilla extract in a large mixing bowl. Add carrots and apricots, and mix well. Add the flour, oats, nutmeg and cinnamon, and mix well. Fold in the Total cereal.

Drop mixture onto cookie sheets (sprayed with non-stick spray) and bake for approximately 15 minutes.
