Ingredients

    4 medium unpeeled russet potatoes (1- 1/4-1-1/2 pounds)

    Creole Seasoning:
    1/2 tsp. chili powder
    1/2 tsp. ground cumin
    1/2 tsp. onion powder
    1/2 tsp. garlic powder
    1/2 tsp. paprika
    1/2 tsp. black pepper
    1/4 tsp. salt
    1/8 tsp cayenne (optional)
    Vegetable oil spray

Directions

Cut the potatoes into long strips about 1/2 inch wide. In a large bowl, let them soak for 15 minutes in enough cold water to cover by one inch.

Meanwhile, in a small bowl, stir together the seasoning ingredients. Set aside.

Preheat the oven at 450 degrees. Lightly spray a large baking sheet with vegetable oil spray.

Drain the potatoes and pat dry with paper towels. Spread the potatoes in a single layer on the baking sheet. Lightly spray the tops with vegetable oil spray. Sprinkle with the seasoning mixture.

Bake for 30 - 35 minutes or until crisp.
