Ingredients

12 oz lean pork tenderloin cut into 1" cubes
1 cup chopped onion (I like Vidalia onions best)
l cup barbecue sauce (jar or homemade)
l package of rice paper wonton/eggroll wrappers
Seasonings to taste
Smart Balance Light Buttery Spread 2 Tbsp melted (or your favorite spread)
Directions
Put pork cubes in preheated slow cooker along with onions and some water. Season, put the lid on and walk away. Every slow cooker is different so the cooking time is approximate. When pork is fork tender add cup of barbecue sauce and let it heat through while you preheat oven to 400 degrees and spray a large cookie sheet with calorie free cooking spray. Using slotted spoon, remove meat from cooker and shred using two forks or fingers. Divide meat between 12 egg roll wrappers. Roll tightly, seal edges with moistened finger. Brush lightly with melted spread. Bake on cookie sheet until browned and crisp. Can be served with your choice of dip.
