Ingredients

    I cup dry white beans
    2 cloves minced garlic
    1T olive oil
    1T ground sage

    1T lemon juice
    salt and pepper to taste
    lemon wedges as garnish if desired

Directions

Soak beans overnight. You can use any dried bean, but the tradtitional recipe calls for white beans.
Heat about 2-3 cups of water in a kettle and preheat the oven to 325
Rinse beans and place in a deep casserole dish
Toss with garlic, sage and olive oil. Top with hot, almost boiling water to 1/2 inch over height of the beans. Cover tightly with foil. Make 6 slits in the foil.
Bake for 2-2 1/2 hours or until beans are very creamy. Season with lemon juice, salt and pepper to taste. Serve with lemon wedges if desired.
