**Edited - 2/19/09 - I changed this from Hamburger Parmesan to Parmesan Skillet, replaced the ground beef with ground turkey**

A quick and easy meal that everyone loves! You can substitute any kind of frozen veggies that you like, or use fresh and add a little more water.

A quick and easy meal that everyone loves! You can substitute any kind of frozen veggies that you like, or use fresh and add a little more water.

Number of Servings: 4

Ingredients

    1 lb ground turkey
    2 cups frozen broccoli
    2 cups frozen cauliflower
    1 cup instant brown rice
    1 cup water
    1/4 cup grated parmesan cheese

Directions

Brown the turkey in a non-stick skillet over medium heat. Add the frozen vegetables (still frozen), rice and water, cover and simmer 15-20 minutes, until veggies and rice are cooked through. Add more water if the rice is too dry. Remove from heat, stir in the parmesan cheese, cover for another 5 minutes.

Makes 4 servings, approx 1.5 cups each

    I sometimes add chicken base or bullion for flavor, but it can be pretty salty. You could also substitute low fat chicken stock for the water. Or add garlic & onion powder and a little crushed red pepper flakes.
