Introduction

Absolutely excellent chili using canned black soybeans and a true 30 minute, 1 pot meal. Have your local supermarket order them for you, or buy online from netrition.com. Beans are very high in carbs and are not permitted on most low-glycemic or low-carb diets and the addition of black soybeans gives this a most authentic taste and feel. Ingredients

    Ground beef, lean, 24 oz
    Eden canned black soybeans (serv. 1/2 c.), 3.5 serving, drained and rinsed
    McCormick Tex-Mex Chili Seasoning (serv. 1 tbsp), 4 serving, 1 package
    Onions, raw, 1 medium (2-1/2" dia), chopped
    Jalapeno Peppers, 2 pepper, chopped
    Garlic, 2 clove, minced
    Olive Oil, 1 tbsp
    Canned Tomatoes, 1 can

Directions

Chop onions finely and sautee in oil until translucent. Add finely chopped jalapeno peppers and garlic. Add ground beef and brown until almost cooked through and pink begins to disappear. Add canned tomatoes and canned (rinsed) soybeans, and chili seasoning. Note that you can substitute other chili seasoning, but this will vary the calorie and carb counts.

Simmer covered for approximately 10 minutes, then uncover and reduce for 5 minutes on med-high heat.

Serve in bowls, garnished with shredded cheese and a dollop of sour cream (not included in counts).

    I love eden black soybeans, great source of fiber, I use it to substitute all my bean recipes, that way I can have my bean and eat it too - 6/10/09
