    1 med head cabbage
    4 cups drained & rinsed sauerkraut
    1 medium onion
    1 tbsp caraway seed
    1 tbsp black ground pepper
    1/2 oz. wild dried mushrooms
    3 cloves garlic
    1 tsp celery seed
    1 oz butterball turkey sausage
    1 large apple
    2 tbsp olive oil
    1 whole bay leaf


Makes 16 1/2 cup servings.

Soak mushrooms in 1 cup water for 20 min.

Drain Sauerkraut (I like the bagged kind best), and save liquid.

Rinse sauerkraut well and put in crock pot

Shred 1 med head cabbage; add to crock pot

Dice turkey sausage into very small pieces and brown; add to crock pot

Finely chop onion & garlic and sautee in 1 tbsp EVOO until dark brown; add to crock pot

Remove mushrooms from liquid but do not throw the juice away. It will be used after the next step.

Rinse the mushrooms again, place on a few paper towels and press out liquid. Place in small grinder and grind to small chunks but not a paste. On low heat, using the other tbsp EVOO, fry the mushrooms for about 2 min., then add to crock pot.

Dice the apple into very small chunks & add to crock pot.

Add the pepper & celery seed.

Add 1/2 c. of the mushroom juice, being careful not to disturb the sedement at the bottom (I spoon it out rather than pour it).

Add bay leaf (remove at end of cooking time and discard)

Before the end of the cooking time, taste. If you like your kraut more sour, add a couple of tbsp of the kraut juice that was saved at drainingl
Cook on low for 3 hrs.
