Introduction

Easy, yummy crockpot soup with lots of possible variations. Tons of protein with few calories and carbs. Easy, yummy crockpot soup with lots of possible variations. Tons of protein with few calories and carbs.
Number of Servings: 15

Ingredients

    1 can diced tomatoes (or stewed tomatoes)
    1 can tomato sauce (15 oz.)
    1 can kidney beans (or two cans)
    1 can black beans (or two cans)
    2 cups (or more or less) frozen corn
    1 pound browned extra lean ground beef, cooked with taco seasoning (use 1 1/2 times as much as called for to add enough for the whole soup if you like it a little spicy)
    1 large onion chopped (opt.)

Directions

Dump everything in the crockpot, warm (the longer it's in there the better everything kind of meshes, but I've done it as short as 1/2 hour and as long as 6 hours), and serve with sour cream (opt.), cheese (opt.), tortilla chips (opt.), and/or warm tortillas. This makes a great cold weather comfort food that's actually good for you! And you can revise the recipe according to what you have in the pantry. I've substituted fat-free refried beans for tomato sauce for a more chili-like soup. I've skipped corn when we were out. Etc. Just play with it and enjoy how filling it is with high protein. (My sis-in-law makes this with ground turkey and it is soooo good!)

Depending on how much you dump in, this makes a lot! It fills my crockpot, so I would estimate 15 1-cup servings at least.
