Yummy and only 15 mins to make!! Yummy and only 15 mins to make!!
Number of Servings: 4


    400 grams of broccoli (two broccoli heads, stalk and heads included)
    3 cups of water
    3 teaspoons of vegetable stock
    1 teaspoon sour cream (or cream)


Makes about 4 bowls of soup.
- Cut up the broccoli into pieces (including the stalk)
- add water, broccoli and stock into a pot and boil for about 6-8 mins or until the broccolli is cooked through (don't overcook!!)
- use a hand held blender to blend the broccoli peices into a smooth consistency
- finally add sour cream/cream and stir through and serve!! Could be vegan if you remove the sour cream, it still taste lovely.
