Introduction

So good and easy! You can substitute chili powder for the taco seasoning, if desired. So good and easy! You can substitute chili powder for the taco seasoning, if desired.

Ingredients

    6 chicken breasts, boneless/skinless
    1 pkg taco seasoning mix
    2 c salsa
    2 T. cornstarch
    1/2 c. light sour cream

Directions

Spray crockpot with nonstick spray, add chicken breasts. Sprinkle with seasoning, then top with salsa. Cook on low 6-8 hours. When ready to serve, remove chicken and thicken sauce with cornstarch (put cornstarch in water first, or it will be lumpy). Stir in sour cream.

I like to serve this over rice with chopped fresh cilantro. (not included in nutritional info.)
