Ingredients

    1 medium banana - ripe or over-ripe
    1 1/4 cups of whole wheat flour
    2 teaspoons of baking powder
    1 1/2 cups of skim milk
    1/4 cup Low Calorie pancake Syrup
    2 cups frozen strawberries

Directions

Place strawberries in a small pan and heat on low heat until strawberries are warmed through.

Sift flour and baking powder together. Mix banana and sweetener on low speed. Alternate adding flour mixtrure and milk until well blended. Do not over mix.

Heatt skillet over medium hear. Spray lighly with cooking spray. Pour about 1/4 cup of pancake mix for each pancake. When the underside is brown, flip to cook the other side. These pancakes need to be medium brown as the banana holds a lot of moisture and they will not taste cooked if they are olny light brown.

Serve with the strawberry-syrup mixture.

    The frozen straweberries make the syrup go a long way and give an extra serving of fruit. The banana and wheat bread make the pancakes more filling than the traditional kind. - 3/10/07
