    3 cups lean ham, cubed
    6 cups water
    1 large onion, chopped
    1/2 tsp dried thyme
    1 bay leaf
    4 medium carrots, chopped
    3 medium potatoes, peeled and cubed
    1 tbl. garlic, minced
    4 cans pinto beans, drained and rinsed


1. Place ham, onion, and garlic in a 5-6 qt. pot. Saute until onion is soft.

2. Add the water, thyme, carrots, beans and bay leaf. Bring to a boil, reduce heat, cover and simmer 1 hour.

3. Add potato. Cover and simmer 15 minutes or until potatoes are tender.
