From "Bean Cuisine" From "Bean Cuisine"
Number of Servings: 4

Ingredients

    1 c chopped onion
    2 minced garlic cloves
    2 tbsp olive oil
    1 c lentils
    2 cups water or basic broth
    1 small can mushrooms
    1 6 oz can tomato paste
    1/2 tsp oregano leaves
    1/4 tsp basil leaves
    1/4 tsp cayenne pepper

Directions

Saute onions & garlic in olive oil. Add lentils and water/broth. Pressure cook (or you can cook the lentils first). Add tomato paste, mushrooms, spices and cayenne pepper. Add salt to taste

Serve with whole wheat pasta and grated Parmesan or Romano cheese.
