Ingredients

    7 eggs beaten
    1/4 cup water
    1 tbsp canola oil
    1 cup finely chopped broccoli
    1 cup finely chopped cauliflower
    1/2 cup finely chopped onion
    10 finely chopped baby carrots
    1 cup sliced mushrooms
    10 cherry tomatoes finely chopped
    2/3 oz shredded mozzarella cheese

Directions

1. heat oil in oven-proof skillet
2. Add chopped vegetables, saute
3. Add ham and warm through
4. Beat eggs with water and pour over mixture.
5. Top with shredded mozzarella cheese
6. Bake in preheated 400 degree oven until top is browned.
