    1 large onion, diced

    1/2 - 1 cup water
28 oz can plus 14 oz can petite diced tomatoes or 2 1/2 pounds ripe plum tomatoes, peeled, seeded and chopped

    1 tsp cinnamon
    1 tsp ginger
    3 TB honey

Directions

In large Dutch oven or large pan heat 1/2 TB olive oil with the onions and sauted until golden, about 6 min. Remove onion and transfer to plate. Add 1/2 TB olive oil to pan. Add chicken and saute until browned about 8 min. Transfer to plate.
Add water to the pan and bring to a boil scraping the bottom of pan to loosen any browned bits. Add tomatoes, honey and spices and simmer 8 min. Return chicken and onions to pot and simmer for 10 minutes.
I serve over brown rice or whole wheat couscous.

This sounds like a receipe my family would enjoy but I'm wondering if the calorie count includes the rice you serve it with because it seems a bit high. - 1/21/09

No, the calories is for the chicken recipe only. Really just chicken and a lot of vegetables and sauce.
