    6 Chicken Leg Quarters (drumstick/thigh) with skin removed
    3/4 cup Lowfat Buttermilk
    140 grams Corn Chex Cereal crumbs (approx 4 cups of cereal before crushed)
    Seasoning of choice
    olive oil cooking spray


Remove skin from chicken. Place chicken in a large bowl, pour buttermilk over, mix to coat chicken and let sit for 15 minutes. Meanwhile, crush the Corn Chex cereal in a food processor until it is fine crumbs. Add seasonings of your choice and mix thorough. Place cereal/seasoning mixture onto a large plate or bowl. Piece by piece, remove chicken from buttermilk and dredge throuh cereal crumbs, pressing crumbs on chicken to coat thoroughly. Place on a jelly roal pan coated with foil and sprayed with cooking spray. Once all chicken is coated and on the pan, sprinkle any remaining cereal/seasoning, and then spray chicken lightly with cooking spray. Bake in a 400 degree oven for 45 minutes, until golden brown and chicken is cooked thoroughly.

  • This was very tasty! The chex and the bread crumbs have the same amount of calories, but the chex have more nutriants. This is a great way to give your calories more punch! This time I seasoned this with old bay spice, but it is versitile so I will try it again using other flavors. - 4/6/09
