Introduction

Ingredients

    Olive Oil, 2 tbsp
    Bl/Sl Chicken Breast, 1 1/2 lbs- 1 inch pieces
    Carrots, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Onions, raw, 2/3 cup, coarse chopped
    Snow pea pods, 3/4 Cup
    Broccoli, fresh, 1 1/2 cup, chopped
    Red Bell Pepper, 1/2 cup sliced
    Garlic, 3 cloves
    Mushrooms, fresh, 1 cup, pieces or slices
    Sesame Seeds, 2 tbsp
    Creamy peanut butter, 3 tbsp
    Soy sauce (shoyu), low sodium, 1/4cup

Directions

Heat oil in a pan and add the chicken breast. when chicken is almost cooked through, add the carrots, celery, and onions. Sear them until starting to brown, then add the broccoli, pea pods, pepper, and garlic. Stir fry for about three minutes then add the sesame seeds, soy sauce, peanut butter and about 1/2 cup of water. stir until the sauce is smooth and simmering. Add salt, pepper, and ground ginger to taste.
