Number of Servings: 6


    For Cupcakes:
    1 Container Chocolate Pudding (Fat Free/Sugar Free)
    1/3 Cup Chocolate Milk
    2 TBSP Olive Oil
    1/3 Cup Sugar
    1 Cup Flour
    1 tsp Almond Extract
    1 tsp Vanilla Extract
    1/4 Cup Cocoa Powder (Unsweetened)
    1/2 tsp Baking Soda
    1/4 tsp Baking Powder
    Dash of Salt

    For Mousse Topping:
    1/2 Cup Margarine
    2 Cups Powdered Sugar
    1/2 Cup Rasberries - Pureed/Blended
    2 TBSP Skim Milk
    1 tsp Vanilla Extract


For Cupcakes:
1) Preheat oven to 350 degrees & line or grease a 6-cup muffin pan.
2) In a large bowl, whisk or beat milk, pudding, oil, sugar and vanilla & almond extracts until well blended.
3) In a medium bowl, sift together flour, cocoa, baking soda, baking powder & salt.
4) Slowly add in wet ingredients & beat or whisk until smooth.
5) Pour batter evenly into each liner (about halfway full each) and bake for 20 minutes.
6) Remove when done & place on cooling rack.

For Mousse Topping:
1) Beat or melt margarine until softened.
2) Add in sugar slowly while beating, until mixture is light & fluffy.
3) Slowly add in pureed raspberries and extract. Add milk for moisture as needed.
4) Beat until mousse forms & plop on cupcakes!

Add sprinkes & an extra raspberry on top if you want!

Makes 6 adorable cupcakes.
