Ingredients

    1 cup Old Fashion Oats (soak in milk listed below)
    1 1/4 cups non fat milk
    1/2 cup whole wheat flour (actual recipe calls for whole grain pastry flour)
    1 1/2 cups oat bran
    2 tsp ground cinnamon
    1 Tbsp banking powder
    3 Tbsp Spenda brown sugar
    3 egg whites
    2/3 cup sugar free applesauce
    1 Tbsp canola oil
    2 tsp pure vanilla extract
    1/2 cup dark raisins, chopped dates, chopped figs, dried tart red cherries, or chopped walnuts (optional) above nutritional calculations include raisins
    I added in 2 Tbsp of flax seed (great for lowering cholesterol and you don't know they are there)

Directions

Preheat the oven to 425 and coat muffin tin with nonstick cooking spray or line with paper banking cups. I spray the paper cups with butter flavor cooking spray. Combine dry ingredients and wet ingredients seperately. Mix each well and then combine wet to dry. Add raisins and/or nuts once all is combined.
Fill muffin tins, place in preheated oven and lower to 400. 17-20 minutes or until lightly browned
